I never thought pimiento cheese to be particularly southern, being from Texas and all. Seems obsessive.
Try making it with manchego & chipotles.
I’m thinking somehow Pimento Cheese is a metaphor for politics? Or a statement on how America is really pockets of food subcultures that don’t cross over much if a food is not marketed heavily on TV? When was the last time you saw a pimento cheese commercial? And I’m ready to try the manchego cheese idea. Brilliant! I look forward to the final film! Pimento cheese is really indie food!
